St Claire fish fillets

1kg Hoki, or other white fish fillets
50g butter
Salt and freshly ground black pepper
2T lemon juice
200g mushrooms, sliced
50g soft breadcrumbs
225g Ornelle St Claire Cheese grated

1. Preheat oven to 180°C

2. Melt the butter in the baking dish.

3. Dip prepared fish fillets in the butter and turn over to completely coat. Arrange in a single layer.

4. Season with salt and pepper and sprinkle with lemon juice.

5. Cook in preheated oven for about 10 minutes.

6. Cover fish with the sliced mushrooms and St Claire Cheese.

7. Sprinkle breadcrumbs on top.

8. Bake in preheated oven for 25-30 minutes or until top is melted and golden brown.
